Walnut and coffee cake

This microwave cake is an instant crowd pleaser.
85g soft butter
85g golden caster sugar
2 eggs, beaten
85g self-raising flour
2 tsp instant coffee
Small handful walnut pieces (optional)
For the topping
1 tsp instant coffee
1 tsp milk
25g soft butter
100g icing sugar
Using a food processor, blitz the butter and sugar together until light and fluffy.
Gradually add the eggs followed by the flour and instant coffee.
Scrape into a microwave safe dish and stir in some of the nuts (leaving some for decoration if desired).
Smooth over and cook on full for 2 minutes. Reduce the power to medium and cook for another 2 minutes.
It should be risen and spring back when touched when done. If it needs a bit longer, cook on medium for 1 minute more at a time, checking after each minute until the cake is cooked.
Remove and allow to cool.
Dissolve the coffee in the milk, then add the butter and icing sugar.
Beat until smooth, spread over the cake and top with the reserved walnuts if using.
