Whole roast seabass
Delicious whole baked fish dish which will be sure to impress.

2 seabass fillets

1 lemon, sliced

4 cloves garlic

2 tbsp estra virgin olive oil

1 bay leaf

Handful cherry tomatoes

Handful basil leaves

Handful fennel leaves

200ml white wine

Salt and pepper

Preheat oven to 200°C/400°C/Gas 4.

Line a baking tray with baking parchment.

Make 5 diagonal incisions about ½ inch deep along the fish and stuff these with the lemon slices.

Season the fish with salt, pepper and olive oil.

Place the herbs and cherry tomatoes into the dish and bake for 30-35 minutes until the fish is cooked through.

Remove from the oven, transfer to plates and serve.
