Boozy cherry pancakes
This is a pancake recipe definitely just for grown ups! Omit the alcohol for a kiddie friendly version.

3 eggs

1 egg yolk

25g golden caster sugar

½ tsp baking powder

85g butter, melted and cooled

300g self-raising flour

200ml milk

To serve:

1 Jar of cherries in kirsch or brandy (or tinned cherries in syrup),

Cream

Beat the 3 eggs and the extra yolk together with the sugar and baking powder and add the butter. Beat the flour gradually into the egg mixture to make a batter, and then pour in the milk and leave to stand for 5-10 minutes until it thickens.

Put a frying pan on a medium heat, add a knob of butter and melt. Put large spoonfuls of the batter into the pan and cook for about 3 minutes until bubbles form on top and the edges start to brown. Turn and cook for a further 2-3 minutes. Keep the pancakes warm and repeat until all the batter is used.

Warm the cherries in a saucepan gently and then generously spoon over the pancakes and top with a big dollop of cream.

If you can’t find a jar of cherries in kirsch or brandy, you can add a splash of Kirsch or brandy to tinned cherries.
