Eve's pudding
It is a really simple recipe but with a gorgeous result and very quick to make so perfect for unexpected guests!

450g cooking apples - peeled, cored and sliced
80g caster sugar
1 tbsp lemon juice
For the topping:
150g self raising flour
75g butter – at room temperature
75g caster sugar
1 beaten egg
3 tbsp milk

Preheat the oven to 180°C/350°F/Gas 4 and lightly grease a 1 ½ pint ovenproof dish.

Mix the apples with the 80g caster sugar and lemon juice.

Empty the apple mixture into the ovenproof dish.

Beat the flour, caster sugar, butter, beaten egg and milk in a large mixing bowl to give a soft dropping consistency.

Spread this over the apples.

Bake in the preheated oven for 40 minutes. The pudding is cooked when the sponge is golden brown.

Serve immediately with cream, custard or ice cream.
