Cherry tomato and cheese garlic slices
An easy Mediterranean snack, with Italian herbs and a garlic cheese finish.
 

300g cherry tomatoes, halved

2 spring onions, white parts only, roughly chopped

Handful parsley, roughly chopped

1 tbsp rosemary needles, finely chopped

3 cloves garlic, finely chopped

80ml olive oil

3 tbsp balsamic vinegar

Salt and freshly ground black pepper

Mozzarella Garlic Bread:

3 -4 tbsp olive oil

3 cloves garlic, finely chopped

4 large, thick slices of crusty bread

125g mozzarella, torn into thick slices

70g Parmesan cheese, grated

Salami slices, to serve (optional)

Toss the tomatoes in a shallow bowl with the spring onions, parsley, rosemary, garlic, olive oil, and vinegar.

Season with salt and pepper.

Cover the bowl and marinate at room temperature for at least 1 hour, but preferably 3 to 4 hours.

Stir them occasionally.

For the garlic bread, combine the olive oil and garlic and let the mixture stand for 10 minutes.

Meanwhile, turn on the grill.

Brush one side of each piece of bread with the garlic and olive oil, and grill until lightly browned.

Put a slice of mozzarella and a generous sprinkling of Parmesan on the toasted side of each slice.

Layer a bit of the marinated tomatoes over the bread and heat through under the grill and serve the rest on the side with salami if you like.
