Corn and chive fritters
These little crunchy fritters are absolutely gorgeous and packed with healthy ingredients.
 

150g self-raising flour

½ tsp baking powder

½ tsp pepper

1 egg

200ml plain yoghurt

198g sweet corn, drained

½ bunch fresh chives, chopped

½ bunch fresh coriander, chopped

Olive oil spray

1 avocado, peeled, stone removed, coarsely chopped

1 tbsp fresh lime juice

1 tsp finely lime zest

Fresh coriander leaves, to serve

Sift the flour and baking powder into a bowl. Season with salt and pepper.

Make a well in the centre of the mix.

Whisk in egg and yoghurt and stir until just smooth.

Add the corn, chives and coriander.

Heat a non-stick frying pan over medium heat and spray with the oil.

Using a table spoon, scoop up the fritter mixture into the pan, allowing room for spreading.

Cook fritters for 2-3 minutes or until bubbles appear.

Turn fritters over and cook for another few minutes and when they have gone golden, remove from the heat.

Combine avocado, lime juice and lime zest in a bowl.

Top fritters with coriander leaves and serve with lime and avocado salsa.
