Egg with watercress sandwiches

Egg with watercress sandwiches
Essential at any tea party or gathering and quick to make.
 

6 eggs

Handful watercress, roughly chopped

8 tbsp mayonnaise

20 small assorted small rolls and or breads

Hard-boil the eggs for 10 minutes, then drain and cool under cold water for 5 minutes.

Peel then roughly chop and place in a bowl.

Add the watercress into the eggs with some salt, pepper and mayonnaise.

Divide the filling between the breads and rolls on a platter and serve.
