Egg, Mustard Mayonnaise & Olive with Brennans Wholewheat Brown Bread

4 tbsp mayonnaise

2 tsp wholegrain mustard

2 spring onions, finely chopped

8 slices of Brennan’s Wholewheat Soda Bread

8 baby gem lettuce leaves

4 just hard boiled eggs, peeled and quartered

12 black olives, destoned and halved

Sea salt and freshly ground black pepper

Mix the mayonnaise, mustard and spring onions together in a small bowl and season to taste with salt and pepper.

Spread this mixture over one side of each of the 8 slices of bread.

Arrange the lettuce leaves on 4 of the slices, sit the egg quarters on top and scatter the olives over.

Top each one with a remaining bread slice, mayonnaise side down.

Either serve straight away or wrap up and keep chilled until ready to enjoy.
