Fishy fried rice

Fishy fried rice
Add tuna to your usual egg fried rice for a tasty twist on the classic recipe.
 

1 large tin tuna

1 tsp olive oil

2 eggs

1 small onion, diced

2 tbsp soy sauce

230g corn

25g cooked peas

320g cooked rice

Beat the eggs into a bowl.

Heat oil in a wok and pour in the egg. Cook for two minutes, flipping half way.

Once cooked, cut the omelette into bite size pieces.

Fry the onion for about 2 minutes, until soft. Stir in the tuna, soy sauce, rice, peas, corn and egg.
