Homemade taco sauce

Homemade taco sauce
This simple sauce is incredibly versatile and will go with most Mexican dishes and makes a fabulous dip.
 

2 tsp olive oil
1 small onion, finely chopped
1 small red pepper, finely chopped
1 garlic clove, minced
400g tin chopped tomatoes, drained
120ml vegetable stock
1 tbsp white wine vinegar
2 tsp cumin
2 tsp smoked paprika
¼ tsp chilli powder (optional)
1 tsp sugar
Salt and pepper to taste

Heat the oil in small saucepan and add the onion, pepper and garlic with a pinch of salt.

Cook on low for 8 minutes until soft.

Add the remaining ingredients and bring to the boil. 

Reduce heat and simmer gently for 5 minutes.

Using a food processor or blender, blitz until smooth or if you prefer texture-just pulse until texture preferred is achieved.
