Mediterranean loaf
A delicious lovely looking shareable savoury treat with Parma ham, brie cheese and roasted red peppers.
 

2 tbsp pesto

4 tbsp mayonnaise

100g roasted red peppers, drained and chopped

50g sundried tomatoes, drained and chopped

Small handful fresh basil, chopped

1 medium round sourdough loaf or cob loaf

85g Parma ham

100g sliced Emmental or Gruyere cheese

200g brie

100g sliced salami

½ cucumber, thinly sliced

4 leaves little gem lettuce

In a small bowl, combine the pesto and mayonnaise together.

Mix together the peppers, sundried tomatoes, basil and season well with salt and pepper.

Cut the loaf in half horizontally, then remove most of the dough from inside so the filling can fit inside.

Spread the pesto mayonnaise inside both pieces of the loaf and layer with the peppers, tomato mixture, ham, Emmental or Gruyere, brie, salami, cucumber and little gem leaves.

Replace the top of the loaf, press together gently and wrap tightly in cling film then chill for 1.5 hours.

Cut into wedges to serve.
