Mixed bean and parsley salad

This delicious combination of beans, greens and a zesty vinaigrette is a great low carb dish.
400g tin, mixed beans, drained and rinsed
10 cherry tomatoes, halved
1 bunch fresh parsley, leaves picked
½ small red onion, cut into thin wedges
2 tbsp red wine vinegar
2 tsp olive oil
1 garlic clove, crushed
Salt and freshly ground black pepper
Place the beans, tomato, parsley and onion in a large bowl and toss to combine.
Whisk together the vinegar, oil and garlic in a small jug or bowl until well combined.
Drizzle over the bean mixture with dressing and toss until well combined.
