Mixed vegetables, fruits and rice salad
Make this simple rice salad loaded with a fantastic combination of fresh fruit and vegetables, for a delicious and healthy meal.
 

225g wild or brown basmati rice

2 apples, cored, quartered and roughly sliced

1 lemon, zest and juice

1 tbsp olive oil

150g frozen peas

3 sticks celery, trimmed and finely sliced

2 spring onions, chopped

1 red chilli, deseeded and finely chopped

4 tbsp parsley, chopped

2 tbsp thyme leaves

2 tbsp chives, chopped

50g dried cranberries

For the dressing

1 lemon, juiced

6 tbsp olive oil

2 tsp Dijon mustard

Bring a pan of lightly salted water to the boil and cook the rice for 12-15 minutes until tender.

Drain and set aside.

Use a large bowl for the apples and squeeze in the lemon juice and toss well.

Cook the peas according to the instructions, drain and add to the rice.

Add the rice to the apples and toss well, add the celery, chilli and herbs and cranberries then toss well to combine.  

Whisk the salad dressing ingredients together then pour over the salad and toss again.

Season generously with salt and freshly ground black pepper and toss again and serve.
