Peach tarts
Sweet, sharp and delicious peach tarts.

2 sheets puff pastry, thawed

410g tinned peaches, rinsed and drained

1 tbsp honey

1 tbsp lemon juice

2 tbsp almond powder (directions to make below)
1 egg, lightly whisked
1 tbsp caster sugar

Ice cream (optional, to serve)

Preheat the oven to 180°C / 350°F / Gas mark 4

Line a baking tray with greaseproof paper and set aside.

Cut each of the pastry sheets into quarters.

Toss the fruit with the honey and lemon juice and mix.

Using either a pestle and mortar, or the food processor whizz enough almonds to make a fine powder.

Brush the pastry quarters with egg, sprinkle the almond powder and sugar over the centre (leave a 1cm border).

Slice the second pastry sheet into 1cm strips.

Layer them around the edges of the squares. Brush with more egg.

Divide the fruit between the squares, reserving the liquid.

Scatter a little more caster sugar over each tart and bake for 20 minutes until golden.

Serve with ice cream if using and the reserved juices drizzled over the top.
