Potato frittata with chorizo

Potato frittata with chorizo
Serve hot or cold for a tasty after-school snack.
 

2 chorizo sausages, diced

55g olive oil

1/2 onion, peeled and sliced

500g potatoes, peeled and diced

4 fresh eggs

Fresh parsley leaves, finely chopped

Salt and pepper to taste

Pour a little of the oil into a frying pan and cook the chorizos on a medium heat.

Once cooked, remove sausages and use the same pan to fry the onions and potatoes.

Crack the eggs into a bowl and add salt and pepper to taste.

Combine the cooked onion and potatoes with the eggs and soak for 10 minutes. Add the chorizo and parsley and season with salt and pepper.

Heat the remaining olive oil in the pan and add the egg mix for 10 minutes. .

Brown the top of the frittata under the grill for 3 minutes.  

Garnish with any leftover parsley.
