Sticky ginger pork chops

Sticky ginger pork chops
Pork chops with a ginger and honey glaze will go well with any greens and rice.
 

2 tsp ground ginger

1 tbsp runny honey

1 tbsp Worcestershire sauce

1 tbsp tomato puree

4 pork chops

200g long grain rice

1 tbsp olive oil

2 courgettes, sliced

100g tinned sweetcorn, drained

Fresh mint, optional for garnish

Pre-heat the grill to medium heat. In a bowl mix together the ginger, honey, Worcestershire sauce and tomato puree.

Coat each pork chop with the mixture and grill for 10 minutes.

Turn the pork chop over and coat with the remaining mixture.

Grill for a further 10 minutes.

Meanwhile cook the rice according to the instructions, drain then heat the olive oil and in a pan and fry with the courgettes and sweetcorn and rice.

Season with salt and pepper then serve with the pork, garnished with mint if using.
