Spicy egg ham scramble
This recipe is the perfect way to use leftover ham.

2tsp olive oil

1 /2 small sweet onion, chopped finely

1 clove garlic, minced

10 eggs at room temperature

125ml milk

2 bunches spinach, washed and shredded

3 large tomatoes, seeded and chopped

1 yellow pepper, seeded and chopped

250g diced cooked ham

Salt and pepper to taste

125g sharp cheddar

50g chopped parsley

Splash hot chilli sauce

Preheata  large skillet over medium high heat and coat with 1 tsp olive oil.

Add onion and garlic and sauté until translucent and soft.

In medium bowl whisk eggs and milk until well combined.

Add beaten egg mixture to skillet and scramble until dry; set aside.

Preheat a small skillet over medium heat and add the rest of the oil. 

Add spinach, tomatoes, ham and salt and pepper; sauté until softened.

Stir in cheddar and season to taste.

Top with chopped parsley and a splash of chilli sauce.
