 Kale garden salad
A bright and colourful salad loaded with antioxidants and immune boosting ingredients.
 

415g curly kale, sliced

2 carrots, peeled and julienned

4 radishes, finely sliced

1 avocado, sliced

200g cherry tomatoes, halved

4 tbsp olive oil

½ orange, juiced

2 tbsp red wine vinegar

Put the kale, radishes and carrots into a large salad bowl.

Season with salt and pepper then add the avocado and cherry tomatoes over the top.

In a bowl, whisk together the olive oil, orange juice and vinegar and pour over the salad.

Allow rest for a few minutes before serving.
