 Stroganoff, Italian style
This simple dish is well liked for its budget friendly ingredients and full flavours, everyone can dig into.

Olive oil, for greasing

450g rib eye steak

200g mixed mushrooms, sliced

400g tinned chopped tomatoes

200g green beans

100g sour cream

300g fresh egg noodles, cooked per directions and drained

Heat a large non-stick skillet over medium-high heat.

Coat with a little olive oil and season the steak and mushrooms with some salt and black pepper.

Place steak in skillet and cook 3 minutes on each side.

Remove to a plate and keep warm.

Add the tomatoes, some salt and black pepper and green beans to the skillet.

Bring to simmer and cook for 5 minutes.

Reduce heat to medium-low.

Slice the steak then add it and the mushrooms along with the sour cream to skillet gently cooking until heated through stirring, 1 to 2 minutes.

Serve meat mixture over cooked egg noodles.
