Apple and sultana muffins

200g self-raising flour

1 tsp baking powder

1 tsp cinnamon

50g wholemeal flour

100g golden caster sugar

2 eggs

125ml semi-skimmed milk

4 tbsp sunflower oil

2 apples, grated

100g sultanas

Preheat oven to 180°C/350°F/gas 4.

In a large bowl combine the flours, baking powder, caster sugar and cinnamon.

Add the eggs, semi-skimmed milk and sunflower oil into a seperate bowl and mix well.

Pour the egg mixture into the flour ingredients and then combine fully.

Stir in the sultanas and grated apples and transfer the mixture evenly between the 12 muffin cases.

Place in the oven to bake for 25 minutes until golden brown. 

Leave to cool on a wire rack, then pack in a container for lunch.
