Apple, banana and mango crumble

The addition of mango and banana to this otherwise simple yet delicious recipe adds an exotic twist.
4 apples
25g brown sugar
2 tbsp water
150g plain flour
75g butter, softened
50g caster sugar
6 bananas
1 mango
Vanilla ice-cream to serve
Preheat the oven to 190°C/ 375°F/ gas 5. Lightly grease a 9 inch pie dish.
In a heavy based saucepan add the apple, brown sugar and 2 tbsp of water and cook for 10-15 minutes until the apple is softened. Set aside to cool.
To make the crumble topping, place the flour in a mixing bowl and rub in the butter until the mixture has a crumb like texture.
Combine with the caster sugar.
Peel and chop the bananas into slices.
Peel the mango and cut into small cubes.
Mix the banana, stewed apple and mango together and add to the bottom of the pie dish.
Cover the fruit with the crumble topping and transfer to the oven for 20-25 minutes until golden.
Serve warm with a generous dollop of ice-cream.
