Asian beef salad

A Thai style beef salad with loads of mixed vegetables and greens is healthy and filling.
Juice of 1 lime
Handful fresh coriander, chopped
3 tbsp sweet chilli sauce
2 cloves garlic, minced
700g lean beef, trimmed of any fat
1 tsp sesame oil
1 medium red onion, chopped
3 cherry tomatoes, halved
1 medium head, romaine lettuce washed and chopped roughly
1 cucumber, thinly sliced
2 tbsp fresh mint, chopped
Combine lime juice, coriander, sweet chilli sauce and garlic in a small bowl and stir well.
Set half the lime mixture aside.
Use a large sealable food bag and place the beef and remainder of the lime mixture inside, keeping 1 tablespoon for later use.
Seal and chill in the fridge for 20 minutes.
Remove steak from bag and discard marinade.
Place the steak on grill and cook for 5 minutes per side
Remove and let stand for 5 minutes.
Cut the steak diagonally, into thin slices
Heat a large non-stick skillet with the sesame oil over medium-high heat
Add the onion and fry for 3 minutes, stirring so they don’t catch.
Add the tomatoes and cook further for 2 minutes
Place the onion-tomato mixture, lettuce, cucumber and mint in a large bowl and toss to combine.
Divide the steak evenly and top each serving with portion of steak
Drizzle each salad with 1 tablespoon of reserved lime mixture and serve.
