Asian chicken salad
This recipe for Asian chicken salad is super quick and easy to make-it's perfect for a light meal or for lunchboxes.

1 boneless, skinless chicken breast

1 tbsp fish sauce

Zest and juice ½ lime

1 tsp caster sugar

100g bag mixed salad leaves

Large handful coriander, roughly chopped

¼ red onion, thinly sliced

¼ cucumber, halved lengthways, sliced

½ chilli, deseeded and thinly sliced

Handful of beansprouts

In a small saucepan, pour water over the chicken breast and bring to the boil, cook for 10 minutes.

Take out of the pan and using a knife tear into shreds.

To make the dressing, stir together the fish sauce, lime zest, juice and sugar until the sugar dissolves.

Place the leaves and coriander in a bowl and top with the chicken, onion, cucumber, chilli and beansprouts.

Sprinkle the dressing over the salad when ready to eat.
