Baba Ganoush uses aubergines to create a delicious dip that goes perfect with flatbread like naan bread.
2 aubergines
2 garlic cloves, minced
1 tsp lemon juice
2 tbsp sesame oil
3 tbsp olive oil
Salt and pepper, to season
1 tbsp chopped flat leaf parsley
Fresh parsley to garnish
Wash your aubergines and prick them with a fork all over.
Place under the grill on a medium temperature and grill for about 20 minutes or until the flesh feels soft. Remove from grill and allow to cool.
In the meantime, combine the crushed garlic, lemon juice, sesame oil and olive oil in a bowl and season with salt and pepper. Add the parsley.
When cool, cut the aubergines in half and scoop out the flesh.
Spoon the flesh into the crushed garlic mix and combine well.
Top with the fresh parsley before serving.
