Bacon and cheese baked potato

Bacon and cheese baked potato
A great after school dish.

2 large potatoes

4 slices of bacon, cut

80g Cheese, grated

1 tsp olive oil

Parsley to garnish

Preheat the oven to 180°C/ gas mark 4

Prick the potato with a fork and bake in the oven for 30 minutes or until soft.

While the potato is cooking, fry the bacon in the oil.

Once cooked, slice the bacon into small pieces. Combine with the cheese in a bowl.

When the potato is ready, remove it from the oven. Cut an X in the side and scoop out the middle.

Mix the potato with the cheese and the bacon.

Place the mixture back into the potato skin.

Sprinkle cheese on top and put back in oven until the cheese has melted.

Garnish with parsley.
