Baked cheesy chips

Baked cheesy chips
Be careful not to melt the cheese while you are baking them. 

125g mozzarella cheese

2 medium eggs

2 tbsp flour

115g breadcrumbs

2 tsp cheddar cheese, grated

1 tbsp dried parsley

1 tsp garlic

1 tbsp olive oil

Cut the cheese into 12 slices and place in the freezer until they are frozen. You can do this the night before.

In a small bowl, beat the eggs together. Sieve the flour into another bowl and combine the breadcrumbs, parsley, garlic and cheddar cheese together in a third.  

Dip the frozen cheese sticks in the flour, then the eggs before coating them with the breadcrumbs mixture.

Place the cheese sticks into the fridge for about 30 minutes. This is to ensure the cheese doesn’t while it is being cooked.

Preheat your oven to 200°C or gas mark 6. Line a baking tray with baking paper.

Place in the oven on the bottom shelf for about 10 minutes or until crisp. Keep an eye on them so they don’t melt.
