Baked polenta fries

Baked polenta fries
These fries are perfect for dipping.
 

960ml water

225g cornflour

3 tbsp unsalted butter

2 tsp salt, extra for seasoning

1 tsp paprika (optional)

1 tsp pepper (optional)

170g olive oil

In a large pot, bring your water to the boil. Add your salt and gently whisk in your cornflour.

Reduce the heat and allow to simmer until the mixture has thickened, about 15 minutes.

Add in the butter and stir until it has melted.  Remove from the heat.

Allow to cool before spreading the mixture onto a baking sheet. Chill in the fridge for an hour, preferably overnight.  

Preheat your oven to 220°C or gas mark 7. Line a baking tray with baking paper.

Slice the mixture into chip shapes and season with the salt, paprika and pepper (if using).

Place in the oven for 20 minutes, flipping half way. Cook until the chips are golden and crispy.
