Chickpea chips
These are a little tricky but are so worth it. Remember, practice makes perfect.

500ml water

Salt and pepper to garnish

3 tsp olive oil

150g chickpea flour

Mozzarella, grated

Pour your water into a saucepan and bring to the boil. Sift in your flour, constantly stirring to prevent lumps form forming. Season with salt and pepper and stir in 1 teaspoon of oil. Reduce the heat and allow to simmer for 2 minutes.

While that is cooking, line a tray with baking paper and spoon the chickpea mixture onto it.

Allow it to cool before covering with clingfilm and placing in the fridge for about 30 minutes. Remove and cut into chip shapes.

On a medium temperature, gently heat the rest of your oil in a large frying pan. Cook the chickpea chips in the oil for about 6 minutes, turning half way. Cook until golden. Remove and place onto a piece of kitchen paper.

Season with salt and pepper.
