Barbecue bean casserole

This delicious recipe shows how you can have a tasty dinner without meat.
20g chopped parsley
3 tsp olive oil
2 onions, finely sliced
2 carrots, finely chopped
2 celery stalks, finely chopped
4 garlic cloves, minced
1 pinch salt
3 x 400g cans of 4 bean mix
750ml stock
70g dark brown sugar
1 tbsp Worcestershire sauce
2 tbsp barbecue sauce
Preheat oven to 180°C/ gas mark 5.
Heat the oil in a sauce pan on a medium temperature. Add the onions, carrots, celery, garlic and salt and cook for five minutes or until the vegetables are al dente.
Pour in the beans and stock and combine well. Add in the sugar, Worcestershire and barbecue sauces and bring to the boil.
Spoon the ingredients into an ovenproof dish and place in the oven to for 1 ½ - 2 hours.
