Easy Mexican bean casserole
This meat free casserole is filling and delicious and a great way to use up any mashed potatoes.
 

100g cheese

2 tsp olive oil

1 onion, sliced

2 garlic cloves, minced

1 red pepper, chopped

1 green pepper, chopped

2 x 400g cans 5 bean mix, drained

2 large tomatoes, chopped

375ml vegetable stock

2 tsp cumin

2 tsp paprika

200g leftover potato mash

Heat oven to 200°C/ gas mark 6

Pour the olive oil in a large pan.

Cook the onion, garlic and peppers for 10 minutes or until soft.

Add in the tomatoes, stock, beans, cumin and paprika. Cook for five minutes or until boiling.

In a small bowl, combine the potato mash with the cheese.

Pour the bean mix into the casserole dish and top with the potato and cheese mix

Bake in the oven for 40 minutes, making sure not to burn the cheese.
