Beautiful blueberry cake
This simple cake melts in your mouth with a light cake and loaded with juicy sweet and sour blueberries.
 

125g butter

100g caster sugar

¼ tsp salt

1 tsp vanilla extract

2 egg yolks

200g plain flour

1 tsp baking powder

80ml milk

2 egg whites

4 tsp sugar

225g fresh blueberries

1 tbsp plain flour

1 tbsp caster sugar

Preheat the oven to 180°C / 350°F / Gas mark 4.

Grease and flour a baking dish.

Cream the butter and 100g of sugar until fluffy.

Add the salt and vanilla and stir.

Separate the eggs and reserve the whites.

Add the egg yolks to the sugar mixture and beat until creamy.

Combine 200g flour and baking powder then add alternately with milk to the egg yolk mixture.

Coat the berries with 1 tablespoon of flour and add to the mixture.

In a separate bowl, beat the egg whites until soft peaks form.

Add 4 tablespoons of sugar, 1 tablespoon at a time, and beat until stiff peaks form.

Fold the egg whites into the mixture.

Pour into the prepared baking dish..

Sprinkle the top with the remaining sugar.

Bake for 50 minutes, or until a skewer inserted near the centre comes out clean.
