Beer-marinated grilled skirt steak

Really tasty B.B.Q steak
1 orange, thinly sliced with peel
1⁄2 onion, thinly sliced
4 garlic cloves, halved and smashed
1kg skirt steak (or any steak that you enjoy)
Salt and fresh ground black pepper
1 x 330ml bottles of Amstel Radler beer
120ml soy sauce
In a wide, shallow pan or glass baking dish, scatter half of the orange slices, half of the onion slices and half of the garlic pieces on the bottom of the dish.
Place the skirt steak on top of the orange/onion layer and season with salt and pepper.
Scatter the remaining orange, onion and garlic over the steak and pour in the beer and soy sauce.
Cover with plastic wrap and marinate minimum 4 hours but preferably overnight in the fridge.
When ready to cook, place a griddle pan on the stove and heat to a high temperature. When the pan is just beginning to smoke, remove the meat from the marinade and lay the steak down on the griddle pan.
Grill the steak according to taste. Slice into thin slices and serve as desired.
