Best ever banana cake

200g self-raising flour
1 teaspoon bicarbonate of soda
130g caster sugar
3 bananas – mashed
2 eggs, lightly beaten
120ml vegetable oil
Preheat the oven to 180°C/350°F/Gas 4.
Grease a ring tin and line the base with baking paper.
Sift the flour and bicarbonate of soda into a bowl. Add the sugar and mix.
Make a well in the centre and add the bananas, eggs and oil.
Stir the mixture until relatively smooth.
Spoon the mixture into the prepared cake tin and bake for 50 minutes until golden brown.
An inserted skewer should come out clean if the cake is cooked.

You can ice this cake using 250g of icing sugar and a little warm water to create glace icing. It should be thicker than pouring consistency.
You can also add 2 teaspoons of ground cinnamon or a handful of dark chocolate drops to really make it interesting (although these additions are not recommended together).
