Really tasty Autumnal dessert which uses delicious blackberries which are abundant at this time of year.
500g blackberries
155g caster sugar
1 lemon, juice and peel
500ml cream
1 vanilla pod, seeds scraped
2 tsp vanilla extract
Place the vanilla pod into a pan with the lemon peel, lemon juice, blackberries and 130g caster sugar.
Cover with a lid and simmer over a low heat for about 8 minutes until the blackberries begin to break down.
Remove from the heat and leave to cool.
Whisk the cream with 2 tsp vanilla extract and the remaining 25g caster sugar until softly whipped.
Pour the blackberry compote into a large bowl.
Fold in the cream in stages with a spatula.
Serve chilled in glasses.
