Blackberry parfait with ice-cream, caramel and pecan nuts

Perfect for a party or as an after dinner snack.
250g fresh blackberries,
1 tbsp sugar
4 – 5 scoops of vanilla ice cream
Handful of pecan nuts
Caramel sauce for garnishing
In a small sauce pan, combine half the blackberries and sugar together over a medium heat until the sugar has melted. You should get a nice liquid from the berries. You can blend them down fully using a hand blender if you like or simply leave them as they are – slightly lumpy with a tasty sauce.
Get two tall ice cream glasses and pour in a little of the sauce into each glass. Spoon in a couple of full berries before topping with some ice-cream. Continue this layering pattern until all ingredients are used up.
Top with the pecan nuts and caramel sauce.
