175g butter or margarine
175g caster sugar
3 eggs
225g plain flour
1½ tsp baking powder
2 tbsp milk
2 tsp vanilla essence
3 tbsp red food colouring
300g icing sugar, sifted
50g butter, at room temperature
125g full-fat cream cheese, cold
Preheat the oven to 180⁰C.
Cream the butter and sugar until soft. Beat in the eggs one at a time, then stir in the remaining ingredients until well mixed.
Place a tablespoon of batter into each bun case and bake in the oven for 15 mins.
For the cream cheese frosting: beat the icing sugar and butter together in an electric mixer until the mixture is well combined.
Add the cream cheese and beat until well mixed. Continue to beat for another few minutes until the frosting is light. Place in the fridge to chill until needed.
When the cupcakes have cooled fully, pipe the frosting onto the cupcakes.
For extra decoration, top with spooky Halloween-themed National Confectionery Company jellies.
