Blueberry yoghurt muffin
These deliciously, sweet blueberry yoghurt muffins are great healthy treats for kids. Why not give your child a muffin for their Friday treat in school?
 

120g self-raising flour

6 tbsp sugar

Pinch salt

1/4 tsp baking powder

1 egg

60g Greek yogurt

3 tbsp olive oil

2 tbsp full fat milk

50g fresh blueberries

Preheat the oven to 180°C/ 350°F/ gas mark 4. Line out 10 muffin cases on a baking tray.

Combine the flour, sugar, salt, baking powder and baking soda together in a small bowl.

Add the egg and mix together. Next, stir in the yoghurt, oil and milk. You can mix with a hand held if you have one.

When you have a thick batter, fold in the blueberries. You can cut the blueberries into small pieces if you want.

Fill each muffin case with the batter. Don’t go right up to the top as they will over flow when baking.

Place in the oven for 20 minutes until golden. To test if they are cooked, insert a skewer into the centre and if it comes out clean they’re done.

Leave to cool before serving.
