Breakfast quesadillas
Your weekend breakfast is sorted with this delicious Slimming World friendly recipe 

1 BFree multigrain wrap (or any Slimming World approved wrap)

2 eggs

2 bacon medallions

40g reduced fat cheddar

5 cherry tomatoes

¼ red onion, finely chopped

2 tbsp fat free yoghurt

In a pan sprayed with Fry Light, scramble the eggs and set aside. Cook the bacon, chop and set aside.

Clean the pan and place the wrap in it. Place the scrambled eggs, cooked bacon and cheese on one half of the wrap and close it using a spatula. Let cook for 2 minutes then turn over. 

When cooked, cut into 3 wedges. 

For the tomato salsa, cut the tomato in quarters, then add the red onion and season with salt and pepper.

Serve the quesadilla with a side of tomato salsa and fat free yoghurt seasoned with salt and pepper.
