Broad bean and tomato salad
This is an easy healthy traditional Middle Eastern influenced salad using spring vegetables.
 

500g frozen broad beans

2 medium fresh tomatoes, chopped

1 small onion, diced

1 cucumber, diced

2 cloves garlic, minced

Half a bunch fresh parsley, chopped

1 lemon, juiced

3 tbsp olive oil

1 tsp ground cumin

Cook the broad beans according to the instructions, drain and combine with the tomatoes, onion and cucumber in a salad bowl.

Toss with garlic, parsley, lemon juice and olive oil.

Season with cumin, and salt and pepper to taste and serve with flat breads.
