Bruschetta is a lovely starter or even side dish. While you can make it with oil this recipe uses butter instead.
1 tsp garlic powder
50g butter
1 large wholemeal baguette, cut into 10/12 slices
150g cream cheese
8 cherry tomatoes, cut into quarters
1 yellow pepper sliced
1 tsp balsamic vinegar
Salt and pepper to season
1 tbsp fresh basil, finely chopped
Preheat the oven to 200°C / 400°F / Gas Mark 6. Line a baking tray with parchment paper.
In a small bowl, mix the olive oil with the garlic powder.
Spread over the bread slices. Line the bread on the baking tray and place in the oven for about 5 minutes until they are crispy.
Remove from oven and allow to cool before spreading the cream cheese on top.
Top with the cut tomatoes and peppers.
Season with salt and pepper and garnish with the basil before serving
