Cherry tomatoes and feta cheese

So easy to make and full of sweet tomato flavour.
150g feta cheese, about 20 cubes
2 tbsp olive oil
Fresh mint leaves, to garnish
20 cherry tomatoes
Salt and pepper to season
Preheat the oven to 180°C / 350°F / Gas Mark 4. Line a baking tray with parchment paper.
Cut your cheese into about 20 cubes and set aside.
Line your tomatoes onto the prepared baking tray and drizzle with the oil.
Place in the oven for 10 minutes, or until they split.
Remove from the oven and place a feat cube into where the tomato has split. It will slightly melt if the tomato is hot enough.
Insert a skewer into each tomato and garnish with the salt and pepper and milt leaves.
