Brussel sprouts, red onion and tomato salad

A crisp salad, made with sprouts, cherry tomatoes and red onion make for a lovely rustic different salad to enjoy.
3 tbsp olive oil
200g Brussels sprouts, quartered
2 small red onions, cut into rings
4 cherry tomatoes, halved
2 tbsp lemon juice
1 tbsp cider vinegar
1 tsp Dijon mustard
1 tbsp honey
2 handfuls baby leaf lettuce
3 tbsp parmesan cheese, (or other hard vegan cheese) grated
In a pan, add the sprouts and onion with the oil and cook together until soft then add the tomatoes, cook for a further 5 minutes and set aside.
In a bowl, combine the lemon juice, vinegar, mustard and honey and whisk.
Pour over the vegetables and toss together.
Pour onto a serving plate and sprinkle over the cheese then serve.
