Brussels sprouts with bacon and almonds
A tasty side for your Christmas dinner

500g net Irish Brussels sprouts

1 tbsp olive oil

Knob of butter

5 cherrywood smoked Irish streaky rashers, chopped

1 garlic clove, chopped

100g whole almonds, chopped

2 tbsp chopped fresh flat-leaf parsley

Blanch the sprouts in boiling salted water for 3-4 mins, then drain & refresh under cold water.

Heat the oil & butter in a frying pan over a medium-high heat.

Add the bacon & cook for 2-3 mins, then tip in the garlic & almonds & cook for 1 min.

Add the sprouts & toss for 2-3 mins, then garnish with parsley.
