Cauliflower and cheese bake

This cauliflower and cheese dish is a simple, budget-friendly and versatile recipe that works as a great side with many main dishes.
50g butter, plus extra for greasing
1 cauliflower, cut
50g plain flour
Salt and pepper to season
250ml milk
110g mozzarella cheese, grated
50g cheddar cheese, grated
Preheat the oven to 200°C / 400°F/ Gas Mark 7. Lightly grease an ovenproof dish with butter.
Cook the cauliflower in a pot of boiling water for 5 – 8 minutes until it is tender. Put the semi-cooked florets into the prepared dish and set aside.
In a saucepan, combine the rest of the butter with the flour and cook until the butter has melted. Season with salt and pepper.
Pour in the milk and whisk until it resembles a sauce-like texture. Add the cheese and cook until melted.
Pour the cheese sauce over the cauliflower and season with a little more salt and pepper.
Place in the oven for 25 minutes until the cheese starts to bubble.
Remove from oven and allow to cool before serving.
