Cheese and spinach pancakes

Cheese and spinach pancakes
Savoury, melted cheese with high in iron pancakes make the perfect light supper or snack for the kids.
 

4 eggs, beaten

100g plain flour, sifted

30g milk

1 tsp baking powder

100g spinach leaves, finely chopped

2 tbsp mint leaves, chopped

100g white cheddar cheese, grated

Olive oil, for cooking

Combine the eggs, flour, milk and baking powder in a bowl.

Add the spinach, mint and cheese.

Stir until well combined.

Add a little oil into a large non-stick frying pan on medium heat until hot.

Add heaped tablespoons of the mixture, allowing for spreading.

Gently flatten with a spoon and cook for 2 minutes, or until golden.

Turn and cook for a further 1 minute, or until cooked through.

Transfer to a plate. Cover to keep warm.

Repeat with remaining mixture.

Serve rolled up, warm.
