Cheesy pancakes with sweetcorn

Creamy melted cheese with sweetcorn pancakes will be a favourite with the children.
225g plain flour
1 tsp baking powder
2 eggs, lightly beaten
300ml milk
100g white or red cheddar, grated
400g tin sweetcorn, drained
2 tbsp chopped flat leaf-parsley leaves or chives
2 tbsp butter, melted
Olive oil cooking spray
In a large bowl, sift the flour and baking powder.
Combine the eggs, milk, cheese, corn and herbs in a medium bowl and mix.
Pour the corn mixture into the flour and mix until well combined, stir in the butter and leave to rest for 10 minutes.
Heat a large fry-pan over medium heat, spray with olive oil spray and pour in about 2 tablespoons of batter for each pikelet.
Cook for 2-3 minutes or until bubbles appear, flip over and cook for another 2 minutes.
