Cheeseboard bake
 
This easy recipe uses up the leftover cheeseboard ingredients well and makes a lovely medley of flavours.

500g pasta of choice

1 tsp olive oil

850ml milk

50g butter

50g plain flour

Half a nutmeg (or ¼ tsp ready ground)

85g mature cheddar, or other hard cheese

85g blue cheese

85g garlic and herb cheese

200g cooked ham, chopped

A handful of parsley, roughly chopped

Preheat the oven to 190°C / 375°F / Gas mark 5.

Grease a baking dish with a little butter and set aside.

Cook the pasta according to the instructions, drain and return to the cooking pot with a teaspoon of olive oil then stir.

To make the sauce, pour the milk into a pan and add the butter, flour, salt and pepper.

Grate in the half nutmeg (or sprinkle in the ready ground).

Bring to the boil over a medium heat, whisking all the time until it makes a smooth, creamy sauce.

Tip the sauce over the pasta then stir in the ham and grate in the cheddar.

Pour into the prepared baking dish.

Dice the remaining cheeses and swirl into the pasta.

Scatter the parley over the pasta and bake in the oven for 30 minutes until everything is piping hot.
