Cherry biscuit hearts

These little jam hearts would make the perfect Valentine's Day gift.
100g icing sugar
200g plain flour,
55g cornflour
45g ground almonds
250g pack cold butter, cut into cubes
1 tsp almond extract
8 tbsp morello cherry/ raspberry jam, sieved
Preheat oven to 180°C/350°F/gas 4.
Sieve together the icing sugar, flour and cornflour into a bowl.
Gently mix in the ground almonds and butter, and then rub in the butter until smooth.
Stir in the almond extract, and mix well to form a dough.
Roll out the pastry on a lightly floured surface, then cut out the biscuits with a heart shaped cookie cutter.
Transfer the biscuits to baking trays lined with grease-proof paper and bake for just 8-10 minutes until just pale golden.
Make a hollow in the centre of each biscuit.
Add in a small amount of jam and place back in the oven to cook for another 2 minutes.
Remove and cool on a wire rack, before dusting with icing sugar.
