Chicken and broccoli pasta salad

Chicken and broccoli pasta salad
This is a great time saver for weekday lunches (for mum and kids)

225g fusilli (pasta twirls)
125g broccoli cut into small florets
1 tin sweetcorn

1 green pepper diced

1 red pepper diced

Cooked chicken pieces

Honey and Soy Dressing:
5 tbsp light olive oil
2 tbsp soy sauce
1 tbsp honey
1 tbsp lemon juice

Cook the pasta according to the packet instructions.

Cut the broccoli into tiny florts, and steam the broccoli for about 3 minutes or blanch in lightly salted water for 2 minutes

Whisk together all the ingredients for the dressing.

Drain the pasta and combine with the broccoli, sweetcorn, peppers, chicken pieces and spring onions

Toss with the dressing and serve.

6 small portions for lunch

All ingredients were bought in Aldi (except for the dressing, ingredients for which I had in the store cupboard). I chose to use Gluten Free pasta for this, however, to make the recipe fully gluten free you would need to use GF soy sauce.
