Tricolore pasta

6 rashers of lean back bacon, fat removed
2 courgettes, sliced
2 crushed cloves garlic
90g reduced-fat Cheddar
90g reduced-fat crème fraiche
150g penne pasta (uncooked weight)
Put the pasta on to boil for about 12 minutes. Meanwhile, chop the bacon and dry fry over a medium heat in a large frying pan. Add the garlic and courgettes and a tablespoon of water. Cook for a few minutes until the courgettes are slightly softened.
When the pasta is cooked, drain it and return it to the saucepan. Add the crème fraiche and 60g of the Cheddar cheese and mix. Add in the bacon and courgette mix. Serve topped with the remaining Cheddar.
